Dirty Seafood Rice 🐟🌾

A cozy, one-pan seafood rice cooked with tomatoes, Cajun flavors, golden seared fish, and shrimp.

This was the first dish I cooked in the blue Le Creuset—a Christmas gift from Michael to us. 🎁🎄
Nothing fancy—just slowly cooking, letting the rice absorb all the flavors.
Simple, comforting, and made without overthinking. 🤓

🌿 Ingredients (Serves 2)

Seafood

  • 1 snapper fillet (skin-on)

  • 8 shrimp, peeled and deveined

  • Salt & black pepper

Vegetables

  • 1 small onion, diced

  • 1 green bell pepper, diced

  • 1 carrot, diced

  • 2–3 tomatoes, diced (about 1 cup)

Rice

  • 1 cup jasmine rice (uncooked)

Seasonings

  • 1 tsp Cajun seasoning

  • 1 tbsp sun-dried tomato pesto

  • Salt & black pepper, to taste

  • Olive oil for cooking

Liquid

  • 2 cups chicken broth
    (add 2–3 tbsp more if needed.)
